Remember the cheese-ball o’ crack I made for Thanksgiving? Well, let’s just say it was a huge hit. I mean, when family members accuse you of putting crack in the cheese-ball because they have lost all self control and can’t put down the damn crackers, it must mean something!
Three weeks ago as me and my coworkers planned our Christmas potluck, I knew what I was bringing….what else? The cheese-ball. I bought all of the ingredients last Thursday night and when my husband was helping me unload groceries he noticed.
“Hey, are you making that cheese-ball again?”
“Yeah, but it’s for work.”
Husband pouts.
“Okay, but can you leave a mini cheese-ball here for me to munch on?” I said yes, it is a rather large ball of cheese that I know we won’t finish during the potluck anyway so that was fine.
Saturday night I noticed I had a few missed voice mails on my cell phone. One from my brother….
“Hey Stace, it’s Mike, I need a favor. I have a potluck next week; will you make me a cheese-ball? Call me back.”
I called him back and told him I would indeed make him a cheese-ball for his potluck and it would be ready the night before for pick up.
“Okay, thanks you are awesome, um…can you um….take some out for me though, to have some at home?”
Sunday we all had dinner at my dad’s house. Mike starts in about the cheese-ball again!
“You are still making one for our family Christmas party too right?”
“Yes.”
My dad over hears.
“Oh, can you make me a cheese-ball for my work potluck? I think its Christmas day.”
“Jeez, what is this family’s problem with cheese?”
Husband responds, “I don’t see a problem.”
Between now and December 24th, I’ll be making 4 cheese-balls, 2 of them will be broken down into mini balls.
That is a lot of cheese.
Anyway, I thought I’d share the recipe for anyone who wanted to make a cheese-ball that impresses!
Remember the first one is free!
1 jar of Old English Cheese
1 jar of Roka Blue Cheese
8 0z Cream Cheese
1 16 oz soft cheddar cheese (I use Schuler)
2 green onions chopped
2 Tbs Worcestershire
Get the cheese out about 1.5 hours before you mix. All cheese should be soft.
Mix together in a bowl. Form into a ball the best you can, it will be soft and place onto plastic wrap and then pull up the plastic wrap to form a ball. Place cheese-ball in a bowl still wrapped with plastic wrap and leave in refrigerator over night. The flavor is much better if you make it the night before!

That’s funny. I totally would and I’d mail it too. I’m not a fan of getting Christmas cards (the thought is nice but I have no where to put them) but wouldn’t it be great to get a cheeseball in the mail?
